As stated in our previous blog, the Paulaner monks drank Salvator as a substitute for food during Lent. Salvator is considered to be the first Doppelbock ever produced, being commercially sold for the first time in 1780. Today, it is the most popular and widely distributed Doppelbock.
The beer displays a hazy copper color similar to that of caramelized sugar. The light tan colored head pours thick but dissipates rather quickly, redistributing through the beer where signs of carbonation appear on the sides of the glass.
Fruity aromas of fermented cherries, raisins, dates and figs are immediately noticeable. Intertwined in the fruit notes are aromas of caramel, raw honey, bread and nuts. This great combination of aromas is similar to smelling fruitcake and a glass of Pedro Ximenez sherry at the same time. There is a light underlying musty note that cuts all the sweetness and adds complexity.
On the palate, there is a strong flavor of fermented cherries and dark dried fruits similar to the nose. There is an abundance of sweet malty and bready notes that bear a thick and heavy mouthfeel. Notes of toasted nuts and caramel peek on the midpalate. The finish lingers with a slightly bitter note that is not detected until this point.
Paulaner Salvator Doppelbock is a well balanced and hearty beer perfect for a chilly spring day. It is no wonder that over 200 years since its inception that this beer is still enjoyed by so many. Try pairing this with a Cajun jambalaya or stuffed jalapenos.
